Recipe for melt in your mouth butterscotch cookies

Are you ready for some delicious cookies that will not last long in your cookie jars?
Kathleen was my helper in making these delicious cookies and she did a fabulous job. :-)

This is a 2 step process, on day 1 you will be preparing and making the dough.
You will need:

3 cups brown sugar
1 cup butter
4 eggs
2 teaspoons vanilla
6 cups flour
2 teaspoons baking soda
2 teaspoons baking powder

Mix sugar and butter together, then add the eggs and mix well. Then add the vanilla, mix together and then add the dry ingredients. Mix well and shape into rolls and place it in plastic wrap. Put in the refrigerator overnight.

The second part takes place on day 2:

Unwrap the rolls and slice them to make cookies. Bake them at 350 degrees until done and be sure to not over bake them. Want them to be moist, not hard.

                             Elvis wanted to help.... or eat them.... something like that, lol!

                 While they are baking you will want to prepare the frosting. "Caramel" icing!

                                                                     1/2 cup of butter
                                                                   1 cup brown sugar
                                                                     1/4 cup of milk
                                                                    1/4 teaspoon salt
                                                                     powdered sugar

Melt butter in the saucepan, add brown sugar, milk and salt. Boil for one minute and cool slightly. Then add in powdered sugar until you have the desired consistency. :-)

Take a teaspoon and carefully frost the cookies, spreading it around with the back side of spoon to coat evenly.

Pick some of your prettiest cups and plates and enjoy the nice warm, delicious cookies with someone you love!

I love you two baking together. I miss that with Mike and daycare. Today I tried a couple recipes that turned out so much better than last week where ..... well the birds loved the muffins.
